Best Tea Cake Recipe to Relax and Enjoy This Weekend


The true meaning of a teacake varies from country to country. In Britain, a teacake is a light yeast-based sweet bun that contains dollops of dried fruit, toasted well and buttered. In the U.S., teacakes are nothing but cookies or small cakes. In Sweden, they are soft round flat wheat breads made with milk and a little sugar, and used to make sandwiches. In many Asian countries, a teacake is actually a sponge cake. Tea refers to the famous, piping hot beverage which these baked goods accompany.

A steaming cup of tea can never be enjoyed without a few tea cakes. Long a favorite around the globe, tea cakes are a sweet treat enjoyed by adults and children alike. To each his own -so the adage goes, therefore every country has its own style of making tea cakes. My favorite one is also incidentally a very basic one but it does definitely serve the purpose.

To make tea cakes, you don't need a great deal of time and energy, just the usual ingredients:

•1c butter

•2c Sugar

•2 tbsp. buttermilk

•3 eggs

•5 c. all-purpose flour

•1 tsp. baking soda

•1 tsp. vanilla

•A mixer

In the mixing bowl put the butter and cream, beat the butter well and gradually add the sugar. 

Blend it completely and add eggs one at a time and continue to beat thoroughly. Next, pour in the buttermilk and beat the mixture until smooth. Keep this mixture aside.

Combine the flour and baking soda in a separate bowl and slowly add the flour mixture into the large mixing bowl stirring slowly to make it smooth. Finally, add the vanilla and stir well.

To get the teacakes with a firm texture, one has to keep it aside for longer hours probably overnight.

When the dough is firm enough, roll it to 1/4-inch thickness on a lightly floured surface. Cut the dough into circles. Place each cake onto a greased cookie sheet and sprinkle each cake with sugar.

Bake the cakes at 400 degrees for 7-8 minutes until the edges are a light brown. Remove the cakes and cool well before serving.

To serve the cakes properly you need to line your serving dish with other snacks and pour yourself a hot cup of aromatic tea.
